Carrot-Orange Butter Cake

Dough Ingredients
– 250g salted butter, softened at room temperature
– 132g castor sugar
– 5 eggs
– 230g cake flour
– 1 tsp baking powder
– 50g Dr OatCare
– grated zest from 1 1/2 orange
– 35g shredded carrot
– 2 tbsp orange juice

Method
1) Beat butter and castor sugar together.
2) Add egg one at a time. Each time beat an egg, make sure it is completely stir inside, then only can add another egg for next.
3) Sift in cake flour and baking powder. Mix well. Add Dr OatCare. Beat well.
4) Add grated zest and shredded carrot, slowly add orange juice and mix well.
5) Pour batter into an 8-inch round cake mould which already lined with parchment paper. Gently shake twice to remove large bubbles.
6) Place cake mould into preheated oven. Bake at 170°C for about 45 minutes. Remove and leave to cool. Cut into pieces and arrange on a plate.

面团用料
– 含盐牛油250克,室温软化
– 细砂糖132克
– 鸡蛋5个
– 低筋面粉230克
– 泡打粉1茶匙
– Dr OatCare 50克
– 橙1个半,取橙皮屑
– 红萝卜丝35克
– 橙汁2汤匙

作法
1) 将牛油和细砂糖一起打发。
2) 分次加入鸡蛋。每打一个鸡蛋,确定它完全被搅拌其中,才可继续加入下一个鸡蛋。
3) 筛入低筋面粉和泡打粉,混合均匀后加入Dr OatCare拌匀。
4) 加入橙皮屑和红萝卜丝,缓慢加入橙汁拌匀。
5) 将面糊倒入已铺好油纸的8寸圆形蛋糕模中,轻震两下以消除较大的气泡。
6) 将蛋糕模放入预先加热的烤箱,以摄氏170度烘烤约45分钟。取出待凉,切块并排于盘内即可。
