Prawns Stuffed with Fish Paste

Ingredients
– 350g fish paste
– 2 tbsp chopped coriander
– 1 tbsp chopped red chillies
– 6 big prawns
– 50ml Bone BioPro

Seasoning
– 1 tbsp light soya sauce
– 1/2 tbsp sesame oil
– 1/4 tsp salt
– 1/4 tsp pepper

Method
1) In a big bowl, stir fish paste, coriander and red chilli unidirectionally till well mixed.
2) Rinse prawns. Scissor off feelers and legs. Scissor the backs to devein.
3) Straighten prawn by inserting toothpick from its tail to the body.
4) Stuff fish paste mixture into prawns’ back.
5) Steam in steam pot for about 8 minutes. Remove toothpick.
6) Bring seasoning and Bone BioPro to boil in a small pot. Turn off heat.
7) Drizzle seasoning onto prawns.

 

用料
– 鱼胶350克
– 芫荽碎2汤匙
– 红辣椒碎1汤匙
– 大虾6只
– 润骨精50毫升

调味料
– 酱青1汤匙
– 麻油半汤匙
– 盐1/4茶匙
– 胡椒粉1/4茶匙

作法
1) 将鱼胶、芫荽碎及红辣椒碎放入大碗中,顺着一个方向拌匀。
2) 将虾洗净,剪掉虾须和虾脚,剪开背部,去泥肠。
3) 用牙签从虾尾插入虾体,使虾身保持挺直。
4) 将鱼胶混合物酿入虾背。
5) 放入蒸锅中,用大火蒸约8分钟,取出牙签。
6) 将调味料和爱多美润骨精放入小锅中,煮至滚沸,熄火。
7) 将调味汁淋在虾上即可。
